Hey everyone. I barbecued an excellent and healthy dinner last night for me and my husband. It was a lean pork chop and roasted vegetables. I used this wonderful roasting dish I got from pampered chief. I sliced zucchini, yellow and orange bell pepper, green onion, garlic and fresh basil. Added salt, pepper and olive oil, drizzled over the veggies. Tossed them lightly and put them on the top rack of the grill. then I prepared the boneless pork chop with salt pepper on both sides. after about 20 minutes I put the pork chops on and lightly tossed the veggies for even cooking. about another 20 minutes I turned the meat and veggies again and in another 20 minutes I took off the veggies and meat. It was a little windy so it took more time but everything was perfect. I love it when my food comes out good. Cooking is one of my passions so I will share more with you from time to time.
